Plant Based Buffalo Cauliflower Mac & Cheese
This is comfort food at its finest! Easy and delicious with just the right kick!

Ingredients
- 1 large cauliflower head, cut into florets
- 4 cloves garlic, minced
- 1/4 cup buffalo wing sauce ( I like Wing-Time brand)
- Salt, pepper & smoked paprika
- 8 oz. pasta (macaroni or shell)
- Breadcrumbs for topping
Dairy Free Cheese Sauce
- 1/2 raw cashews soaked in boiling water for 15 minutes (then drained)
- 1 1/2 cups water
- 1 Tbsp nutritional yeast
- 2 Tbsp buffalo sauce
- 1/2 tsp salt
Instructions
- Toss cauliflower and garlic with some avocado oil spray, salt, pepper and smoked paprika. Roast at 425 for 20 minutes, then add 1/4 cup buffalo wing sauce and cook 5-10 more minutes.
- Cook pasta. Make cheese sauce in a blender. Blend until it is smooth!
- Combine everything in a glass baking dish, top with bread crumbs and broil for a few minutes until the top is crispy!
