Oh So Creamy Vegan Mac & Cheese
This is by far my favorite plant-based Mac & Cheese! It is so quick, easy and delicious. We all crave a little comfort food now and then, but it can be trial and error trying to find the best plant-based recreations. But, let me tell you, I have tested out so many different Mac & Cheese sauce recipes throughout the years and this is definitely the best replica to the real thing. So good, you won’t even miss the cheese!

Oh So Creamy Vegan Mac & Cheese
Enjoy a comfort food staple while still eating plant-based. So good you won't even realize there is no cheese!

Ingredients
- 1 lb macaroni noodles
- 1/2 cup raw cashews
- 1 cup nutritional yeast
- 1 cup non-dairy milk (unsweetened)
- 1 cup water
- 3 tbsp arrowroot powder (or cornstarch)
- Juice of one lemon
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp mustard powder
- 1 tsp pink salt
- 1/2 tsp smoked paprika
- 1/2 tsp turmeric
- Pinch of black pepper
- Red pepper flakes for topping (optional)
Instructions
- Soak the cashews in boiling water for 15 minutes.
- Cook pasta.
- Add all other ingredients to a blender and blend until smooth.
- Toss with cooked pasta.
- Enjoy!
