Quick & Easy Kale Salad
I always love adding apple to a salad - so refreshing and crisp. This quick & easy kale salad is always a good go-to lunch or dinner salad that you can throw together in less than 10 minutes!

Ingredients
- 1 bunch Dino Kale
- 1 lemon + a shake of pink salt
- 1 avocado. chopped
- 1 fuji or honey crisp apple, diced
- 1 tbsp olive oil
- 1 tsp tamari
- 1/4 cup raw pumpkin seeds, toasted
Instructions
- Remove the stems from the kale, wash, and cut into slivers.
- Put this in a bowl and add the lemon juice and salt. Massage the kale (using a glove or baggie) until you start to see a bit of green juice at the bottom of the bowl.
- Add the avocado, apple, olive oil and tamari and toss.
- Put the pumpkin seeds in a dry sauce pan and cook on medium until you hear some snapping as they toast.
- Add to salad and toss again!
- Enjoy!
