10 Minute Arugula Beet Salad with Lemon Mustardy Dressing

Did you know beets are so good for your skin, brain, heart, blood flow and athletic performance?! Make this beet salad a few times a month- we all needs more beets in our diet!

Ingredients

  • 1 can chickpeas, drained
  • 2 cups cooked quinoa
  • 1 cup cooked beets (I use the pre-cooked version from Whole Foods)
  • 4 cups arugula
  • Scallions for topping.
  • Optional: Dairy free feta cheese
Dressing
  • Juice of 1 lemon
  • 3 tablespoons tahini
  • 1 tablespoon grainy mustard
  • 2-3 tablespoons water
  • 1/2 tsp each: pink salt, garlic granules
  • 1/4 tsp pepper

Instructions

  1. Whisk together the dressing and toss with the other ingredients!
  2. Enjoy!
