1-Pot Zesty Lemon Vegan Spaghetti
A dinner that takes just 15 minutes?! Yes please! Zesty lemon adds just the right touch of interest to this simple, yet completely delicious dish. AND it makes the best leftovers for lunch the following day!

Ingredients
- 8 oz. spaghetti
- Zest from 2 lemons
- 1 clove garlic, crushed
- 1⁄2 cup lemon juice
- 1/4 cup olive oil
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 2/3 cup dairy free parmesan cheese 1⁄2 cup fresh basil, chopped, divided
Instructions
- Start cooking the pasta.
- Mix the lemon zest, garlic, lemon juice, olive oil, salt and pepper in a small bowl.
- Drain the pasta and put it back in the cooking pot.
- Add the lemon mixture, parmesan cheese and 1⁄4 cup of the basil. Stir to combine.
- Use the reserved basil to top the pasta right before serving.
