Mediterranean Rice Salad

Ingredients
Salad Ingredients
- 1 cup cooked brown rice
- 1 can garbanzo beans, drained
- 1 can artichoke hearts, quartered
- 1 cup roasted red pepper slices (jarred)
- 2 cups grape tomatoes, halved
- 1 English cucumber, diced
- 1/2 cup kalamata olives
- 1/2 cup fresh parsley, chopped
Dressing
- 1 Tbsp each: olive oil, maple syrup
- Juice of one large lemon
- 1 clove garlic, minced
- 1 tsp Dijon mustard
- 1/2 tsp pink salt
- 1/4 tsp pepper
Instructions
- Mix all ingredients together and top with dressing!
