Mediterranean Rice Salad

Ingredients

Salad Ingredients
  • 1 cup cooked brown rice
  • 1 can garbanzo beans, drained
  • 1 can artichoke hearts, quartered
  • 1 cup roasted red pepper slices (jarred)
  • 2 cups grape tomatoes, halved
  • 1 English cucumber, diced
  • 1/2 cup kalamata olives
  • 1/2 cup fresh parsley, chopped
Dressing
  • 1 Tbsp each: olive oil, maple syrup
  • Juice of one large lemon
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • 1/2 tsp pink salt
  • 1/4 tsp pepper

Instructions

  1. Mix all ingredients together and top with dressing!
