Instant Pot Pumpkin Spiced Steel Cut Oats

Instant Pot Pumpkin Spiced Steel Cut Oats
Make on a Sunday and have a delicious breakfast ready to go for the rest of the week!

Ingredients
- 2 cups steel cut oats
- 1 can coconut milk
- 2 1/4 cups water
- 1/2 tsp pink salt
- 1 tsp vanilla
- 1/3 cup canned pumpkin
- 2 tbsp maple syrup
- 1 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/2 cup non-dairy milk
- Walnuts and apples for topping
Instructions
- If using the instant pot, spray with avocado oil spray. Add the oats, coconut milk, water, and salt. Cook at high pressure for 4 minutes and let it natural release for 20 minutes.
- If cooking on stove, use package directions swapping the coconut milk in place of water. (Add in a few oz of water if too dry)
- When oats are done, add in pumpkin, maple syrup, vanilla spices, and the non-dairy milk.
- Top with walnuts, apples, and more non-dairy milk if desired. You can also add more syrup here.
