Mediterranean Tofu Sheet Pan Dinner
This sheet pan dinner is incredibly easy to throw together! Just prep the ingredients, throw on a pan, and the oven will take care of the rest. Bonus, there is only one dish to clean! Add a side of rice to this dish and you have a filling, nutritious meal that also makes great leftovers for lunch the following day.

Mediterranean Tofu Sheet Pan Dinner
Prep your ingredients, throw on a pan and the oven will do the rest! We always love sheet pan dinners for easy clean up after a busy day.

Ingredients
- 1 red onion, sliced
- 1 carton mushrooms, sliced
- 1 bag fingerling potatoes, quartered
- 1 red pepper, chopped
- 1/2 cup fresh parsley, chopped
- 1/3 cup kalamata olives, halved
- 1 block extra firm tofu, pressed out, cubed
Marinade
- 2 tbsp olive oil
- 1 lemon, juice and zest
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp pink salt
Instructions
- Preheat oven to 375 degrees.
- Mix marinade ingredients and toss with veggies and tofu.
- Spread out on large baking sheets and bake for 25-30 minutes.
- When they are done, toss with parsley and olives. Serve with rice.
