Mediterranean Tofu Sheet Pan Dinner

Prep your ingredients, throw on a pan and the oven will do the rest! We always love sheet pan dinners for easy clean up after a busy day.

Ingredients

  • 1 red onion, sliced
  • 1 carton mushrooms, sliced
  • 1 bag fingerling potatoes, quartered
  • 1 red pepper, chopped
  • 1/2 cup fresh parsley, chopped
  • 1/3 cup kalamata olives, halved
  • 1 block extra firm tofu, pressed out, cubed
Marinade
  • 2 tbsp olive oil
  • 1 lemon, juice and zest
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp pink salt

Instructions

  1. Preheat oven to 375 degrees.
  2. Mix marinade ingredients and toss with veggies and tofu.
  3. Spread out on large baking sheets and bake for 25-30 minutes.
  4. When they are done, toss with parsley and olives. Serve with rice.
  5. Enjoy!
