The most important thing is to have a few go-to recipes that you always turn to when on the road or flying. These salad jars are a favorite of mine for occasions on the road! They are pretty easy to eat too without a mess!

5 Minute Road Trip Garbanzo Salad Jars
My favorite road trip food to feel FRESH instead of FULL! This mixture takes about 2 minutes to throw together, then put it in mason jars, throw in your cooler and you're road trip ready with a healthy snack!

Ingredients
- 2 cans garbanzo beans, drained
- 1/4 cup red onion, diced
- 1 cup tomatoes, halved
- 1/4 cup fresh herbs (parsley or cilantro)
- 1-2 tbsp olive oil
- 1-2 tbsp Braggs vinegar
- Salt/Pepper
- Juice from one lime
Instructions
- Combine everything and put into 16 oz mason jars.
- Enjoy!
