Air Fried Eggplant Tempeh Lettuce Tomato TLT Sandwich
This recipe is a must-try! I finally found the best alternatives to create my all-time fav TLT sandwich. My secrets to level up your standard TLT sandwich: the preseasoned Lightlife tempeh bacon and Bob’s Red Mill egg replacer. Use these two alternatives to really bring this delicious recipe to life! This is one of my favorites I always have on repeat for lunch or a quick dinner.

Air Fried Eggplant Tempeh Lettuce Tomato TLT Sandwich
This eggplant TLT is seriously unbelievable! After trial and error, I finally found the best alternatives that really make this sandwich just delicious! This is one of my all-time favorites.

Ingredients
- 1/2 eggplant, sliced 1/4” thick
- 2 Tbsp Bobʼs Red Mill egg replacer
- 6 tablespoons water (or use aquafaba)
- 1 cup panko
- 1 Tbsp nutritional yeast
- 1 pkg Lightlife tempeh bacon
- Sourdough bread
- Earth Balance butter Vegenaise
- Tomato
- Arugula
Instructions
- Mix together the egg replacer and water. Wait a few minutes until it is thick. Combine the panko and nutritional yeast in a separate bowl.
- Dip eggplant in the egg replacer and then into the panko.
- Air fry for 20 minutes on 400F (or cook in oven using convection
- setting, same temp and time)
- Cook the tempeh bacon in a skillet. Remove from pan and add in bread slices that have Earth Balance on one side. Toast in pan.
- Layer the bread with vegenaise, eggplant, tempeh bacon, tomato and arugula!
