10 Minute Arugula Beet Salad with Lemon Mustardy Dressing
Did you know beets are so good for your skin, brain, heart, blood flow and athletic performance?! Make this beet salad a few times a month- we all needs more beets in our diet!

Ingredients
- 1 can chickpeas, drained
- 2 cups cooked quinoa
- 1 cup cooked beets (I use the pre-cooked version from Whole Foods)
- 4 cups arugula
- Scallions for topping.
- Optional: Dairy free feta cheese
Dressing
- Juice of 1 lemon
- 3 tablespoons tahini
- 1 tablespoon grainy mustard
- 2-3 tablespoons water
- 1/2 tsp each: pink salt, garlic granules
- 1/4 tsp pepper
Instructions
- Whisk together the dressing and toss with the other ingredients!
- Enjoy!
