Dairy Free Marinated Veggie Chopped Salad
You will love this marinated veggie salad any day of the year! It is so easy to throw together. Just 15 minutes of prep and pop it in the fridge to chill and enjoy a couple hours later.

Ingredients
Salad Ingredients
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cucumber, diced
- 1 cup cauliflower, finely chopped
- 2 scallions, diced
- 1/4 cup dill, chopped
- 1/4 cup parsley, chopped
- 1/4 cup green olives, chopped
- 1 can artichoke hearts, chopped
- 1/4 cup roasted red peppers, sliced
- 1/4 napa cabbage, chopped
- 1 cup tomatoes, chopped
- 1/4 cup dairy free feta
Marinade Ingredients
- 4 tablespoons olive oil
- 3 tablespoons braggs vinegar
- 1 1/2 tsp Italian Seasoning
- 1/2 tsp garlic granules
- 1 tsp pink salt
- 1/2 tsp pepper
- 2 tsp Dijon
Instructions
- Mix up dressing in a jar and shake
- Combine carrots, celery, cucumber, scallions, dill, parsley, olives, artichoke hearts and roasted red peppers.
- Toss with dressing and marinate for 2 hours.
- Add cabbage, tomatoes and feta!
- Enjoy!
