Grilled Corn & Zesty Zucchini Salad
Hosting a BBQ or attending a gathering? This dish is so easy to throw together and is the perfect, healthy side to make! It has just the right touch of acid and heat with lime juice and cholula in the dressing.

Ingredients
Salad Ingredients:
- 2 ears corn
- 1 zucchini, cut into thick slices
- 1 bunch radishes, chopped into matchsticks
- 1/2 English cucumber, de-seeded and chopped
- 12-15 grape tomatoes, halved
- 1 red bell pepper, chopped
- 2 avocados, chopped
- 1 cup sugar snap pears, chopped
- 1/3 cup slivered almonds
- 1/4 cup cilantro, chopped
Dressing Ingredients:
- 3 tbsp olive oil
- 3 tbsp lime juice
- 1 tbsp cholula
- 1 tsp maple syrup
- 1 garlic clove, crushed
- 1/2 tsp pink salt
- 1/4 tsp pepper
Instructions
- Brush corn and zucchini with avocado oil, salt & pepper
- Put on grill or griddle pan and char on all sides
- Let cook and cut corn off cob, chop zucchini
- Mix up dressing and toss with everything else.
