Hummus Veggie Sandwich

This sandwich is a favorite of mine to throw together when I'm short on time and still want to eat something nutritious. Great for lunch or dinner any day of the week when you're on the move!

Ingredients

  • Hummus
  • Cucumber Slices
  • Tomatoes, sliced
  • Scallions, sliced
  • Kalamata olives
  • Carrots, shredded
  • Basil, sliced
  • 1/2 avocado, sliced
  • Arugula
  • Pink salt, pepper
  • Ezekiel or Dave's Killer Bread, toasted

Instructions

  1. Spread hummus on one side of bread
  2. Layer veggies
  3. Top with salt and pepper
  4. Enjoy!
