Vegan “Just Egg” Omelette

Okay, calling all vegan, plant-based eaters! You can now enjoy an omelette and stick to your healthy habits. This new egg alternative is SO good, made from plants, and is a new pantry staple around here.

Veggie packed and a great traditional breakfast option for the plant-based vegan eaters who may find themselves missing eggs.

Just Egg Vegan Omelette

Just Egg Vegan Omelette

You can still enjoy an omelette while remaining plant-based with this Just Egg creation. So good, you may even think it's the real thing!

Ingredients

Just Egg Vegan Omelette
  • 1 tsp. Avocado oil
  • 1/2 cup Just Egg
  • 1/2 cup cooked broccoli
  • 1/2 cup cooked mushrooms
  • 1/4 cup grape tomatoes, halved
  • Fresh arugula

Instructions

  1. Cut broccoli really small and sauce with sliced mushrooms until soft.
  2. Heat up a non-stick skillet over medium-high heat and add 1 tsp avocado oil, making sure to distribute the oil evenly.
  3. Add the Just Egg to the pan. Allow it to sit and warm in the pan for 1 minute then swirl gently to let it heat evenly. 
  4. As the edges and bottom start to cook and solidify, run a spatula around the edges to keep them loose.
  5. Cook on low until the top surface has solidified (this takes a while)
  6. Flip the omelette over and cook for a few more minutes.
  7. Transfer to a plate and fill with veggies! 
  8. Enjoy!

Notes:

If you want the egg fluffier, whisk in 1 tbsp flour and 1/8 tsp baking powder into the Just Egg before putting it in the pan.
