Sun Dried Tomato Pesto Pasta
A great weeknight dinner to throw together with minimal prep! Packed with flavor from the sun dried tomato pesto and olive combination. You will likely have leftovers that will also keep to have for lunch later in the week too!

Sun Dried Tomato & Olive Pasta
A mediterranean spin on a classic pasta dish. Served with fresh basil from the garden!

Ingredients
- 1 lb pasta
- 1 cup basil leaves, packed
- 1/3 cup sun dried tomatoes
- 1/4 cup green olives
- 1/4 cup kalamata olives
- 3 tbsp pine nuts
- 3 tbsp nutritional yeast
- 3 garlic cloves
- 1/2 tsp pink salt
- 1/2 tsp red pepper flakes
- 1/2 tsp black pepper
- 2 tbsp water
- 1 tbsp olive oil
- 1/2-1 cup paste cooking water
- basil and olives for topping
Instructions
- Cook pasta and reserve 1 cup pasta water
- Add all other ingredients (except toppings) to food processor and blend well.
- When pasta is done, drain and put back in pot
- Add sauce and 1/2 cup pasta water. Stir to blend
- If it seems dry add a little more pasta water
- Add fresh basil and more olives for serving
