Quick & Easy Vegan Ricotta Bruschetta
Everyone always love a bruschetta board appetizer! My quick & easy vegan ricotta recipe makes the perfect holiday appetizer or snack to serve at any gathering.

Ingredients
Ricotta Ingredients
- 1 package extra firm tofu
- 1 tbsp nutritional yeast
- 1 tsp oregano
- 1 tsp pink salt
- 1 tsp garlic powder
- 1/2-1 lemon, juiced
Bruschetta Ingredients
- 1 baguette loaf
- Diced tomatoes, or grape tomatoes, halved
- Fresh basil
- Pink Salt
Instructions
- Press out tofu for 30 minutes by layering a flat plate on top, then something heavy like a cast iron skillet (or use a tofu press).
- Blend all ricotta ingredients in a food processor.
- Dice or half tomatoes and mixed with slivered basil and pink salt.
- Slice loaf, toast bread and layer with ricotta, diced tomato mixture or tomato halves, basil and pink salt.
- Enjoy!
