Quick & Easy Vegan Ricotta Bruschetta

Everyone always love a bruschetta board appetizer! My quick & easy vegan ricotta recipe makes the perfect holiday appetizer or snack to serve at any gathering.

Ingredients

Ricotta Ingredients
  • 1 package extra firm tofu
  • 1 tbsp nutritional yeast
  • 1 tsp oregano
  • 1 tsp pink salt
  • 1 tsp garlic powder
  • 1/2-1 lemon, juiced
Bruschetta Ingredients
  • 1 baguette loaf
  • Diced tomatoes, or grape tomatoes, halved
  • Fresh basil
  • Pink Salt

Instructions

  1. Press out tofu for 30 minutes by layering a flat plate on top, then something heavy like a cast iron skillet (or use a tofu press).
  2. Blend all ricotta ingredients in a food processor.
  3. Dice or half tomatoes and mixed with slivered basil and pink salt.
  4. Slice loaf, toast bread and layer with ricotta, diced tomato mixture or tomato halves, basil and pink salt.
  5. Enjoy!
