Savory Sunday Scramble
Take a little extra time on the weekend to make this Savory Sunday Scramble. Packed with a variety of veggies, a little heat and even a little touch of sweet with the maple tofu. Make a batch of the maple tofu and add some to the savory scramble and hold some to use throughout the week in a stir fry or buddha bowl for dinner. A little extra protein is always a good idea.

Savory Sunday Scramble
Ingredients
- 1 red bell pepper, sliced
- 4-6 red potatoes, diced
- 8 oz. box mushrooms, sliced
- 2 gloves garlic, minced
- 2 handfuls arugula
- 1 batch of cooked maple tofu (optional)
- Avocado and salsa for topping
- Smoke paprika, salt, pepper, and garlic
- 1 pack of extra firm tofu, pressed* and cute into cubes
- 3 tbsp miso paste
- 1 tsp sesame oil
- 1 tbsp dijon mustard
- 2 tbsp maple syrup
- 1-3 tbsp water
Instructions
- Boil potatoes for about 10 minutes until they are fork tender.
- Add avocado oil to a skillet and sauce red bell pepper, garlic and mushrooms for a few minutes. Then add the cooked potatoes.
- Season with salt, paper and smoked paprika.
- Cook for about 15 minutes until the potatoes start to crisp up.
- Add in the cooked tofu, if using, and war up. Then add arugula and cook for a few minutes until it wilts.
- Top with salta and avocado & enjoy!
- Add all sauce ingredients to a small bowl and whisk. If it is too thick, add more water.
- Add this and your cubed tofu to a glass dish and marinate for at least an hour.
- Heat up a non-stick pan to medium with a little avocado oil and cook for about 5 minutes before stirring.
- Book until all sides are brown and crispy. This will take about 30-40 minutes.
- Air fryer instructions: 13 minutes at 400, shaking halfway

Notes:
* to press the water out of tofu, take it out to the package and place in a shallow, wide bowl. Lay a paper towel on top of the tofu and place a flat plate on top of it. Then put something heavy (like a cast iron skillet) on top and let it sit for 30 minutes. When this is done, pour out the water that has collected in the bowl.
