Under 30 Minute Hearty Veggie Couscous Soup

Under 30 Minute Hearty Veggie Couscous Soup
Temperatures are finally cooling down, so that calls for new soups to cozy up with this fall and winter. This soup is the best because you can just combine any veggies you have left in the fridge for a delicious under 30 minute meal that makes great leftovers!

Ingredients
- 1 Tbsp avocado oil
- 1/2 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 tsp each: cumin, pink salt, garlic granules, oregano
- 4 cups broth
- 1 cup couscous
- 1 can fire roasted tomatoes
- 1 cup cabbage, sliced
- 1 cup broccoli, chopped
Instructions
- Add oil to a large pot and bring to medium high heat.
- Add the onion, carrots, and celery.
- Saute for 10 minutes.
- Add the spices, broth, couscous, tomatoes and bring to a boil.
- Add the broccoli and cabbage and cook on medium for 7 minutes or until couscous is done.
- Top with fresh herbs!
