Under 30 Minute Kale & Vegan Pesto Pasta
Vegan pesto is made incredibly simple with this combination! Throw this all together in about 20 minutes and you are set with dinner and even leftovers for another meal!

Ingredients
- 2 cups chopped kale, stems removed
- 1 avocado
- 2 cups fresh basil
- 1/4 cup nutritional yeast
- 2 garlic cloves, minced Juice from one lemon 3 Tbsp olive oil
- 1/2 tsp pink salt
- 8 oz. Pasta (I am using Seggiano from Whole Foods)
Instructions
- Put all pesto ingredients in a food processor and blend until smooth
- Toss with cooked pasta!
- Enjoy!
