Plant-Based Mediterranean Salad with Sun Dried Tomatoes

Ingredients
Salad Ingredients
- 2 cans garbanzo beans, rinsed & drained
- 4 roma tomatoes, chopped
- 1 English cucumber, diced
- 1/4 red onion, sliced
- 1 cup Italian parsley, chopped
- 1/2 cup kalamata olives, halved
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup sun dried tomatoes
Dressing Ingredients
- 3 Tbsp olive oil
- 1 Tbsp Braggs vinegar
- Juice of one lime
- Juice of one lemon
- 1 tsp pink salt
- 1/2 tsp oregano
- 1/2 tsp garlic granules
- 1/2 tsp pepper
Instructions
- In a large bowl, mix the beans, tomatoes, cucumber, red onion, parsley, olives, dill, basil and sun dried tomatoes.
- Whisk together the dressing
- Toss together!
