Vegan Roasted Veggie & Pesto Ciabatta Sandwich
Ciabatta, please! By far, the best bread option for any sandwich. Having it for a quick lunch or dinner is always a treat! Are you a pesto lover like I am? It is such a nice addition to so many different dishes, but you can still enjoy it with this vegan version! It combines perfectly with these roasted veggies for a quick and healthy under 30 minute meal! You will even have some leftover pesto to use on another dish you make throughout the week!

Ingredients
Ingredients
- 1 zucchini, sliced thick
- 1/2 eggplant, sliced 1/4”
- Red and yellow pepper, sliced
- 1 tbsp olive oil
- 1 large tomato, sliced
- 6 large basil leaves
- 2 ciabatta rolls
Pesto Ingredients
- 2 cups basil
- 1/2 cup pine nuts
- 1 garlic clove, minced
- Juice and zest of one lemon
- 2 tbsp olive oil
- 1/2 tsp pink salt
Instructions
- Preheat oven to 400
- Toss the zucchini, eggplant and peppers with the olive oil, salt, and pepper.
- Bake for 20-30 minutes
- Blend pesto ingredients in food processor.
- Toast ciabatta bread, then layer pesto, roasted veggies, fresh tomato and basil.
- (*You will have pesto left over)
