Vegan Thai Crunch Sesame Salad

Looking for a quick and easy lunch or dinner under 15 minutes?! This salad is the answer! Veggie packed, nutrient dense, and oh so delicious. A refreshing go-to meal to have on repeat during the warmer months.

Ingredients

  • 1 romaine heart, chopped small
  • 1 cup dino kale, stems removed, slivered 1/2 cup purple cabbage
  • 1/2 cup grated carrots
  • 1 red pepper, chopped
  • 1/2 cup steamed broccoli, chopped small 3/4 cup shelled edamame
  • 1 mango, diced
  • 3 tablespoons toasted cashews
  • Sesame seeds for topping
Dressing
  • 3 tablespoons tahini
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup 2 teaspoons sesame oil
  • 2 teaspoons soy sauce
  • 1 tsp grated ginger
  • Juice of 1/2 lemon
  • 1/2 teaspoon salt

Instructions

  1. Mix up the dressing and toss with salad ingredients. Top with sesame seeds!
