Vegan Thai Crunch Sesame Salad
Looking for a quick and easy lunch or dinner under 15 minutes?! This salad is the answer! Veggie packed, nutrient dense, and oh so delicious. A refreshing go-to meal to have on repeat during the warmer months.

Ingredients
- 1 romaine heart, chopped small
- 1 cup dino kale, stems removed, slivered 1/2 cup purple cabbage
- 1/2 cup grated carrots
- 1 red pepper, chopped
- 1/2 cup steamed broccoli, chopped small 3/4 cup shelled edamame
- 1 mango, diced
- 3 tablespoons toasted cashews
- Sesame seeds for topping
Dressing
- 3 tablespoons tahini
- 2 tablespoons rice vinegar
- 1 tablespoon honey or maple syrup 2 teaspoons sesame oil
- 2 teaspoons soy sauce
- 1 tsp grated ginger
- Juice of 1/2 lemon
- 1/2 teaspoon salt
Instructions
- Mix up the dressing and toss with salad ingredients. Top with sesame seeds!
