25 Minute Zesty Lemon Artichoke Pasta Salad
Takes less than 25 minutes, uses staple ingredients, and is so flavorful - what’s not to love about this dish?! A great salad to throw together for a quick lunch or dinner and also makes the perfect offering to bring to a gathering or party! Here in Arizona, I always have extra citrus, so I love creating recipes like this one to make use of the extra lemons. The perfect zesty flavor and, of course, had to add fresh lemon slices for pretty (and yummy) garnish!

Zesty Lemon Artichoke Pasta Salad
A favorite recipe (with staple ingredients) that typically does not require a special trip to the store! What's not to love?! The zesty lemon adds such a refreshing touch to this mediterranean flavored dish.

Ingredients
- 8 oz. bow tie pasta
- 1 small carton grape tomatoes, halved
- 1 can artichoke hearts, chopped
- 3 cups arugula
- 1 bunch asparagus, cut into 1" pieces
- 10 kalamata olives, halved
Dressing
- 2 tbsp olive oil
- 2 tbsp Bragg's apple cider vinegar
- Juice of one lemon (extra for garnish)
- 1 tsp pink salt
- 1/2 tsp garlic powder
- 1/4 tsp pepper
Instructions
- Start cooking the pasta and add the chopped asparagus to the pot when there are 4 minutes left on the cooking time.
- When it's done drain and add to a big bowl with other ingredients.
- Whisk together the dressing and toss.
- Garnish with sliced lemons.
- Enjoy!
