Vegan Mediterranean Farro Salad with Tofu Feta

Vegan Mediterranean Farro Salad with Tofu Feta
This salad is perfect for those warmer days when you want something refreshing and cold but still filling! The farro adds a little extra substance to fill you up and the tofu adds a nice bit of protein too!

Ingredients
- 1 block extra firm tofu, pressed
- Juice of 1 lemon
- 3 tbsp olive oil
- 1 tsp pink salt
- 1 tsp garlic powder
- 1/2 tsp pink salt
- 1/2 tsp oregano
- 1/4 tsp pepper
- 2 cups cooked farro
- 1 English cucumber, chopped
- 1 cup grape tomatoes, quartered
- 1/2 cup sun dried tomatoes (from a jar), chopped
- 1/2 cup fresh basil, cut into slivers
- 1 cup arugula
Instructions
- After the tofu has been pressed, chop into small cubes.
- Mix up the lemon juice, olive oil, oregano, salt, pepper and garlic powder.
- Add the tofu to a small container and pour over the dressing. Let it marinate for at least an hour.
- Combine the rest of the ingredients together and add tofu and all of the extra marinade. This becomes the dressing for the salad.
