Make this in a larger batch to take as a side to a BBQ or gathering as well as a plant-based healthy option!

This 10 minute salad is so FRESH and delicious to throw together at a moment's notice. Stock up on frozen organic shelled edamame and you can whip this together any day of the week in a flash for a quick lunch, dinner or snack.

Ingredients

  • 1 bag frozen shelled edamame (organic)
  • 1 red pepper, diced
  • 1 cucumber, diced
  • 1/2 bunch cilantro, chopped
  • Olive oil, braggs vinegar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp hemp seeds

Instructions

  1. Cook edamame and toss with everything else. Chill
  2. Enjoy!
