Saucy Enchiladas with Sweet Potato and Black Beans

These plant-based enchiladas are full of flavor, loaded with fiber and antioxidants, and are so easy to make. I’m using sweet potatoes, black beans, red pepper, and jalapeno as the core ingredients along with a can of green chilis and green salsa to flavor them up! I like to use lots of avocado, scallions, and salsa for topping and also great topped with dairy-free sour cream and dairy-free cheese! Perfect to make at the start of the week because they reheat well for a quick lunch or dinner.

Saucy Enchiladas with Sweet Potato and Black Beans

These plant-based enchiladas are full of flavor, loaded with fiber and antioxidants, and are so easy to make. Ingredients

  • 1 1/2 cups medium diced sweet potatoes
  • 1 tablespoon oil or use 1/4 cup broth
  • 1 diced red pepper
  • 3 minced garlic cloves
  • 1 diced jalapeno
  • 1 can black beans, drained
  • 1/4 cup green salsa
  • 1 can green chilis
  • 1 teaspoon each: chili powder, cumin, salt
  • 6 large tortillas
  • 1 can enchilada sauce
  • Toppings: avocado, cilantro, peppers. You can also add dairy-free cheese.

Instructions

  1. Preheat the oven to 350 F.
  2. Add the sweet potatoes to a pot and cover with water. Boil for about 5-8 minutes or until they are tender. Be careful not to overcook.
  3. Add the oil to a pan and drop in the red pepper, garlic, and jalapeno. Sauté for about 5 minutes.
  4. Add the green salsa, green chilis, black beans, and spices. Stir to combine.
  5. Fill the tortillas and wrap up. Top with enchilada sauce.
  6. Bake for 20 minutes. If adding cheese, pop the baking sheet back into the oven for 5-10 minutes. Add toppings or make one of my green sauces!
