Ingredients
- 1 onion, diced
- 1 package tempeh
- 6 cloves garlic, minced
- 1 box mushrooms, diced
- 1 jalapeno, diced (optional)
- 4 cups vegetable broth
- 1 can black or kidney beans, drained
- 1 28 oz. can crushed fire roasted tomatoes
- 2 tbsp tomato paste
- 1 cup frozen corn
- 6 oz. elbow pasta
- 1 tsp maple syrup
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp pink salt
- 1 tsp oregano
- 2 tsp cumin
- 1/4 tsp red chili flakes
Instructions
- Saute the onion for a few minutes. Then add in the garlic, mushrooms, and crumbled tempeh.
- Pour in the broth, beans, tomato paste, fire roasted tomatoes, corn, pasta and spices.
- Bring to a boil and let cook for 10-15 minutes until pasta is done.
- Now add in maple syrup and check seasonings.
- Top with red onion and vegan cheese if desired.
- Enjoy!
