Plant-Based Black Bean Taquitos with Avocado Cilantro Sauce
Taquitos are so easy to have on-the-go! Throw these together to eat throughout the week or make for a quick weeknight (kid-approved) dinner. The avocado cilantro sauce is a favorite of mine to throw on my mexican chopped salad, plant-based quesadillas or really any Mexican dish I create!
If you are a fan of meal planning, which I highly recommend to stay on track. I like to make some of the avocado cilantro sauce on a Sunday to keep in the fridge and just add to my meals throughout the week. It saves time when making lunch or dinner and adds so much flavor to complement all of your dishes!

Plant-Based Black Bean Taquitos & Avocado Cilantro Sauce
A flavorful, easy, plant-based taquito- what's not to love?! These taquitos are always hit with the whole family! Make some extra and you can heat up throughout the week for lunch or dinner on-the-go!

Ingredients
Taquito Ingredients
- 2 cans black beans, drained
- 1 red pepper, diced
- 1/2 red onion, diced
- 1 can green chilis
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp pink salt
- 12-15 6 inch flour tortillas
- Fresh tomatoes, cilantro, red onion for topping
Sauce Ingredients
- 1 avocado
- 3 tbsp (water)
- 3 tbsp lime juice
- 1 tbsp apple cider vinegar
- 1 cup packed cilantro (large stems removed)
- 1 tsp pink Himalayan salt
- 1 tsp cumin
- 1/2 tsp garlic powder
Instructions
- Preheat oven to 425 degrees.
- Sauté onion, garlic, and red pepper for 5 minutes
- Now add beans, green chilis, and spices. Simmer for 10 minutes and add water if pan is drying out.
- Spoon a small amount of bean mixture into tortilla and roll up keeping ends open.
- Place seam side down on a baking rack over a baking sheet. Spray with cooking spray. Bake 10-15 minutes.
- (Sauce): put dressing ingredients in small food processor or nutribullet.
- Add toppings, sauce, and serve!
