Refreshing Vegan Waldorf Salad

Through a hot Phoenix summer I am always trying to create new and refreshing recipes to use on repeat through those warm months- and this Waldorf salad definitely fits the bill! The combination of strawberries, pomegranate seeds, celery and apples not only creates a beautiful array of color but is also crisp and SO fresh! And, you can still have that creamy dressing without the dairy. I have also included a nice little crunch factor by adding in a walnut brittle (also so yummy to snack on right off the pan😉). You can even make a little extra walnut brittle to save and add to your fruit & coconut yogurt for a morning treat!

Refreshing Vegan Waldorf Salad

Always a great go-to salad through spring & summer! Refreshing with a touch of crunch from the walnut brittle.

Ingredients

Salad Ingredients
  • Romaine lettuce
  • Strawberries, chopped
  • Celery, diced
  • Honeycrisp apple, chopped
  • Pomegranate seeds
  • Craisins
  • Walnut brittle
Dressing Ingredients
  • 3 tbsp olive oil
  • 1/3 cup plain coconut yogurt
  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tsp dijon mustard
  • 1 tsp thyme
  • 1 tsp pink salt
  • 1/2 tsp pepper
Walnut Brittle Ingredients
  • 1/2 cup raw walnuts, chopped
  • 1/4 cup pumpkin seeds
  • 2 tbsp maple syrup
  • 1 tsp olive oil
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 275 degrees.
  2. Mix brittle ingredients and lay on a lined baking sheet in a single layer. Bake 35 minutes.
  3. Let cool, then break apart.
  4. Stir together dressing.
  5. Combine everything and toss with dressing.
