Refreshing Vegan Waldorf Salad
Through a hot Phoenix summer I am always trying to create new and refreshing recipes to use on repeat through those warm months- and this Waldorf salad definitely fits the bill! The combination of strawberries, pomegranate seeds, celery and apples not only creates a beautiful array of color but is also crisp and SO fresh! And, you can still have that creamy dressing without the dairy. I have also included a nice little crunch factor by adding in a walnut brittle (also so yummy to snack on right off the pan😉). You can even make a little extra walnut brittle to save and add to your fruit & coconut yogurt for a morning treat!

Refreshing Vegan Waldorf Salad
Ingredients
- Romaine lettuce
- Strawberries, chopped
- Celery, diced
- Honeycrisp apple, chopped
- Pomegranate seeds
- Craisins
- Walnut brittle
- 3 tbsp olive oil
- 1/3 cup plain coconut yogurt
- 2 tbsp apple cider vinegar
- 1 tbsp maple syrup
- 1 tsp dijon mustard
- 1 tsp thyme
- 1 tsp pink salt
- 1/2 tsp pepper
- 1/2 cup raw walnuts, chopped
- 1/4 cup pumpkin seeds
- 2 tbsp maple syrup
- 1 tsp olive oil
- 1/4 tsp salt
Instructions
- Preheat oven to 275 degrees.
- Mix brittle ingredients and lay on a lined baking sheet in a single layer. Bake 35 minutes.
- Let cool, then break apart.
- Stir together dressing.
- Combine everything and toss with dressing.
