15 Minute Mexican Chopped Salad & Vegan Avocado Cilantro Dressing
Are you looking around saying “what should we have for dinner?” Sometimes, well, more often that not, the days gets away from many of us and we are stuck trying to figure out what to make for dinner with little time (and few ingredients) to work with. That’s when I turn to my 15 minute Mexican chopped salad!
You will likely have all of the ingredients already on hand and only need a bit of time to throw it all together! Win, win! Just because you may not have planned all of your meals does not mean something healthy and delicious can’t be thrown together in a pinch! Just gather a handful of easy 15-30 minute dinners that are your go-to favorites to have in the back of your mind when these circumstances may arise.

15 Minute Mexican Chopped Salad & Vegan Avocado Cilantro Dressing
Ingredients
- 2 romane hearts
- 1 can black beans, rinsed & drained
- 1 cup rice (plain or Spanish)
- 1/4 red onion, sliced (or sub scallions)
- 1 tomato, chopped
- 1/4 cup black olives
- 1 cup corn
- 1 avocado
- 3 tbsp water (or more)
- 3 tbsp lime juice
- 1 tbsp apple cider vinegar
- 1 cup packed cilantro (large stems removed)
- 1 tsp pink Himalayan salt
- 1 tsp cumin
- 1/2 tsp garlic powder
Instructions
- Chop romaine and fill bottom of bowl. Layer other ingredients on top.
- Put dressing ingredients in small food processor or nutribullet. Toss & serve.
- Enjoy!
