Healthy White Bean & Cucumber Dill Summer Salad
Summertime calls for all things refreshing & cold! No need to use the oven, and you can throw this together in just 15 minutes. Dill is always plentiful in the spring and summer months in my herb garden, so I made this creation to make use of the extra dill!

Healthy White Bean & Cucumber Dill Summer Salad
This salad just tastes like summer! Refreshing, healthy, and the perfect touch of dill for a fresh seasonal flavor. Throw together in just 15 minutes and take to a friend or family get together.

Ingredients
- 2 cans white northern or cannellini beans, drained
- 1 English cucumber, diced
- 8 radishes, cut into matchsticks
- 1/2 cup fresh dill, chopped
Dressing Ingredients
- 2 Tbsp olive oil
- Juice of 1 lemon
- 1 Tbsp Ume Plum (or substitute barges apple cider)
- 1 tsp Dijon mustard
- 1/2 tsp pink salt
- 1/2 tsp garlic powder
- 1/4 tsp pepper
Instructions
- Whisk up dressing and toss over salad.
