Vegan Chai Spiced Granola
It is always nice to have things on hand for breakfast to help save time in the mornings. It is even better to know that there are no additives! I love a crunchy, homemade granola and this recipe is a favorite for the chai spiced flavor. Keep your granola in an air-tight container to keep it fresher longer and use throughout the week to throw on oatmeal, coconut yogurt, or eat plain as a snack!

Vegan Chai Spiced Granola
This is my new favorite granola recipe that I have been adding to my oatmeal and coconut yogurt on repeat for breakfast!
Prep time: 10 MinCook time: 30 MinTotal time: 40 Min
Ingredients
- 2 cups rolled oats
- 1 cup almonds, chopped or slivered
- 1 cup walnuts, chopped
- 2 tsp cinnamon
- 1/4 tsp ginger
- 1/4 tsp cardamom
- 1/4 tsp cloves
- 1/4 cup coconut oil
- 1/3 cup maple syrup or raw honey
- 1 tsp vanilla
- 1/2 cup dried cranberries, cherries or raisins
Instructions
- Preheat oven to 300 degrees and line a baking sheet with parchment paper.
- Mix together the oats, nuts and spices.
- In a small pot heat up the coconut oil, maple syrup and vanilla.
- Pour this over the oat mixture and coat well. Spread in a single layer on the baking sheets and bake 30 minutes.
- Take out of the oven and cool for 30 minutes so it will harden.
- Add in the dried fruit.
- Enjoy!
