This vegan dense bean salad is a healthier, plant-based twist on the trending classic, loaded with protein-packed beans, vibrant veggies, and a zesty dressing. Great for meal prep!

Ingredients

  • 1 diced shallot
  • 1 diced red and orange pepper
  • 1 diced cucumber
  • 1 diced roasted red pepper
  • 1 diced bunch parsley
  • 1 can Kidney beans and black beans
  • 2 cups shelled edamame
  • 1 can diced artichoke hearts
  • 1/2 cup kalamata olives
Dressing
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • Juice of 1 lemon
  • 3 cloves crushed garlic
  • 2 tablespoons grainy mustard
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning

Instructions

  1. Whisk up dressing and toss over salad ingredients!
