Greek Orzo Pasta with Fresh Dill & Mint
Greek cuisine is known for its vibrant and fresh ingredients that come together to create dishes bursting with flavors. This Greek orzo pasta with fresh dill is one of those flavorful dishes you’re going to want to make asap! The fresh dill and mint in this salad puts it over the top in freshness! To make this recipe we’ll need some fresh items from the produce department. Pick up an English cucumber, shallot, fresh dill, and fresh mint. I like using English cucumber here because it’s less watery but a standard cuke works fine too. Then we’ll need some orzo, kalamata olives, roasted red peppers, and garbanzo beans. For the dressing grab some olive oil, white wine vinegar, Dijon, oregano, pink Himalayan salt, and pepper.
Heat up the water for the orzo and get going on chopping the cucumber, shallot, dill, and mint. Put all of the chopped veggies into a large bowl along with the olives, roasted red peppers, and garbanzo beans. Whisk the dressing ingredients together in a small bowl. When the pasta is done, add it to the bowl and toss with the dressing. This just might become your new favorite weeknight dinner!

Greek Orzo Salad with fresh Dill and Mint
Ingredients
- 8 ounces orzo or any small pasta
- 1 English cucumber, diced
- 1 shallot, diced
- 1/3 cup fresh dill, chopped
- 1/3 cup fresh mint, chopped
- 1/2 cup kalamata olives, halved
- 1/2 cup roasted red peppers, sliced
- 1 can garbanzo beans, drained
- 3 tablespoons olive oil
- 2 tablespoons white wine vinegar
- 1 teaspoon Dijon
- 1 teaspoon oregano
- 1 teaspoon pink salt
- 1/2 teaspoon pepper
Instructions
- Cook the orzo.
- Chop the veggies and put in a large bowl
- Whisk up the dressing and toss everything together!
