This vegan Mediterranean sandwich features roasted, caramelized eggplant, roasted red peppers, sun dried tomatoes, olives, and hummus. It's easy to make and makes a great weeknight dinner.

Sourdough Mediterranean Sandwich

This vegan Mediterranean sandwich features roasted, caramelized eggplant, roasted red peppers, sun dried tomatoes, olives, and hummus. It's easy to make and makes a great weeknight dinner.

Ingredients

  • 1/2 eggplant cut into 6 slices about 1/2" thick
  • Olive oil, salt, smoked paprika, garlic granules
  • 1 cup green olives
  • Sourdough bread or any type of bread you like
  • Roasted red peppers from a jar
  • Sun-dried tomatoes from a jar
  • Fresh basil leaves
  • Spinach
  • Hummus
  • Pepperoncini's
  • Earth Balance butter

Instructions

  1. Preheat the oven to 400F.
  2. Drizzle the eggplant slices with olive oil and sprinkle on the seasonings. Roast 10-15 minutes or until the eggplant is nicely browned.
  3. Dice the olives either by hand or with a food chopper.
  4. Slice the bread and butter one side with Earth balance.
  5. On the unbuttered side, add a layer of the hummus or pesto on one side of the bread and a layer of the dice olive spread on the other. Then to either side add the eggplant, roasted red pepper, sun dried tomatoes, pepperoncini's, basil, and spinach.
  6. Close the sandwich and sear in a hot skillet for about 4 minutes on each side.
  7. Cut and serve.
  8. You will have enough eggplant for 3 big sandwiches!
