Ingredients
- 1/2 eggplant cut into 6 slices about 1/2" thick
- Olive oil, salt, smoked paprika, garlic granules
- 1 cup green olives
- Sourdough bread or any type of bread you like
- Roasted red peppers from a jar
- Sun-dried tomatoes from a jar
- Fresh basil leaves
- Spinach
- Hummus
- Pepperoncini's
- Earth Balance butter
Instructions
- Preheat the oven to 400F.
- Drizzle the eggplant slices with olive oil and sprinkle on the seasonings. Roast 10-15 minutes or until the eggplant is nicely browned.
- Dice the olives either by hand or with a food chopper.
- Slice the bread and butter one side with Earth balance.
- On the unbuttered side, add a layer of the hummus or pesto on one side of the bread and a layer of the dice olive spread on the other. Then to either side add the eggplant, roasted red pepper, sun dried tomatoes, pepperoncini's, basil, and spinach.
- Close the sandwich and sear in a hot skillet for about 4 minutes on each side.
- Cut and serve.
- You will have enough eggplant for 3 big sandwiches!
