This 15-minute pasta dish has a bit of a kick but not crazy hot. This Gochujang sauce is the best! You can make the sauce in the time it takes to cook the pasta!

Gochujang Pasta

This 15-minute pasta dish has a bit of a kick but not crazy hot. You can make the sauce in the time it takes to cook the pasta!

Ingredients

  • 8 ounces pasta, reserve 1/2 cup of the cooking water
  • 3 tablespoons Earth Balance butter, divided
  • 1 diced shallot bulb
  • 4 diced garlic cloves
  • 2 tablespoons rice vinegar
  • 2 tablespoons gochujang paste
  • 1 tablespoon tomato paste
  • 1/2 cup vegan parmesan (I'm using @daiyafoods )

Instructions

  1. Cook the pasta saving 1/2 cup of the pasta water.
  2. Add 2 tablespoons of the butter to a frying pan and bring the heat to medium high.
  3. When melted add the shallots and garlic. Cook 5 minutes.
  4. Add the rice vinegar and stir for a couple of minutes.
  5. Now add the gochujang and tomato paste and stir for a few minutes.
  6. Add the cooked pasta, pasta water, Parmesan cheese, and remaining 1 tablespoon of butter. Simmer for few minutes and serve!
