Nothing better than a meal that comes together in 10-minutes. The perfect vegan meal for weeknight dinners! Hearty and satisfying. Its great to pair with a bowl of soup!

Ingredients

  • 1 diced English cucumber
  • 1 diced green pepper
  • 1/2 cup halved grape tomatoes
  • 1/4 cup diced red onion
  • 1 cup garbanzo beans
  • 1/4 cup kalamata olives
  • 1/2 cup thinly sliced red cabbage
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 crushed garlic clove
  • 1 tablespoon lemon juice
  • 1 teaspoon oregano
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Combine all salad ingredients in a bowl.
  2. Mix up dressing and toss with salad!
