If you watched the Blue Zones series on Netflix then you know that beans are the common ingredient eaten in the 5 regions with the longest living population. This salad takes 10 minutes to make and will help you live to 100!

Ingredients

  • 3 cups shelled edamame (I buy them frozen and boil for 2 minutes)
  • 1 can black beans, rinsed and drained
  • 1 1/2 cups white corn
  • 1/2 cup grape tomatoes, halved
  • 1/4 cup diced red onion
  • 1 large avocado
  • Juice of 2 limes
  • 1/2 teaspoon garlic granules
  • Salt and pepper to taste.

Instructions

  1. Toss it all together!
