Oven tostadas

Nothing better than a quick Mexican themed dinner! I'm using pre-cooked lentils here to speed things up and making a delicious avocado cilantro sauce to take these tostadas over the top!

Ingredients

  • 1 package TJ's lentils
  • 1/4 cup broth
  • 1 teaspoon each: chili powder, cumin paprika, garlic granules, onion granules, salt
  • 12 small corn tortillas
  • 3 tablespoons avocado oil
  • Juice of 1 1/2 limes
  • 1/2 teaspoon each: chili powder, cumin, smoked paprika, salt
  • Dairy free cheese
Green Sauce
  • 1 avocado
  • 1 cup cilantro
  • 1/3 cup water
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 375 F.
  2. Mix together the avocado oil chili powder, cumin, and smoked paprika.
  3. Spread the tortillas on a baking sheet and brush the lime mixture on both sides of the tortillas. Pop into the oven for 12 minutes or until they are crispy.
  4. Meanwhile add the lentils and spices to a pan with the broth and spices.
  5. top the tortillas with the lentil mixture and cheese and put back into the oven for 5 minutes.
  6. Put sauce ingredients into a blender.
  7. Serve sauce with tostadas!
