Nothing better than a quick Mexican themed dinner! I'm using pre-cooked lentils here to speed things up and making a delicious avocado cilantro sauce to take these tostadas over the top!

Nothing better than a quick Mexican themed dinner! I'm using pre-cooked lentils here to speed things up and making a delicious avocado cilantro sauce to take these tostadas over the top!
Ingredients
- 1 package TJ's lentils
- 1/4 cup broth
- 1 teaspoon each: chili powder, cumin paprika, garlic granules, onion granules, salt
- 12 small corn tortillas
- 3 tablespoons avocado oil
- Juice of 1 1/2 limes
- 1/2 teaspoon each: chili powder, cumin, smoked paprika, salt
- Dairy free cheese
Green Sauce
- 1 avocado
- 1 cup cilantro
- 1/3 cup water
- 2 tablespoons lime juice
- 1/2 teaspoon salt
Instructions
- Preheat oven to 375 F.
- Mix together the avocado oil chili powder, cumin, and smoked paprika.
- Spread the tortillas on a baking sheet and brush the lime mixture on both sides of the tortillas. Pop into the oven for 12 minutes or until they are crispy.
- Meanwhile add the lentils and spices to a pan with the broth and spices.
- top the tortillas with the lentil mixture and cheese and put back into the oven for 5 minutes.
- Put sauce ingredients into a blender.
- Serve sauce with tostadas!
